Bianco 2019 Villa Minelli
Mainly Chardonnay
This white wine made from mainly Chardonnay grapes grown in the Ponzano Veneto area has a straw yellow colour with greenish hues. The bouquet is intense and fruity, with hints of fresh wild flowers and ripe yellow fruit which reoccur on the palate, together with a delightful freshness and harmony. The grapes are hand-picked and sorted in the vineyard, followed by fermentation with low sulphur dioxide content and ageing on fine lees until bottling.

HARVESTING AND VINIFICATION
Hand picking in 10/12 kg crates. Variety by variety, when the grapes are perfectly ripe. The grapes are sorted in the vineyard, then on a vibrating table in the winery, followed by destemming, soft crushing by roller, very short cold maceration with dry ice and fermentation at a controlled temperature with low sulphur dioxide content. Ageing on fine lees for as long as possible, bottling and short bottle-ageing.

TASTING NOTES: hints of ripe yellow fruit, consistently fresh and progressing from golden delicious apple, through abate pear to juicy peach, followed by spring flowers and lilies. The first impact on the palate is immediately rich and fruity, unfolding gradually to an ever fresher taste which then slowly softens into honeyed perfection. Pleasantly well-balanced and harmonious. Ideal with baked turbot, fried shellfish and crustaceans, small pumpkin gnocchi and fresh creamy goat's cheeses.
