From historic Malvasia Istriana vineyards with loose-packed bunches comes a golden yellow wine with an intense, fruity bouquet and overtones of peach and melon. The flavourful fruitiness is evident on the palate with a finish that returns on the nose. Grown in the Ponzano Veneto area, hand-picked and sorted in the vineyard, followed by a brief period of cold maceration, fermentation with low sulphur dioxide content and ageing on fine lees until bottling.

HARVESTING AND VINIFICATION

Hand picking in 10/12 kg crates all at the same time. The grapes are sorted in the vineyard, then on a vibrating table in the winery, followed by destemming, soft crushing by roller, very short cold maceration with dry ice and fermentation at a controlled temperature with low sulphur dioxide content. Ageing on fine lees for as long as possible, bottling and short bottle-ageing.

 

ANALYTICAL DATA: alcohol content: 12.00% vol.; total acidity: 5 g/l

TASTING NOTES: bright straw yellow, with excellent balance between a remarkable density and suppleness.
The first impact on the nose is intense, almost aromatic, with distinct hints of ripe peach and pear and juicy melon. The wine then unfolds with flowery notes of jasmine, followed by hints of aromatic sage and thyme.
On the palate, it immediately amazes for the perfect balance between velvety warmth and a perceptible richness of flavour, against a delicately fresh background with good body. Intense and persistent, with a lingering fruity finish. The perfect wine to accompany Sauris prosciutto, risotto with chanterelles and cherry tomatoes, veal with tuna sauce and mushroom salad with flakes of semi-mature cheese.
