White wine made from Pinot Grigio grapes grown in the Ponzano Veneto area; straw yellow with greenish hues and an intense fruity bouquet with hints of wild flowers and ripe yellow fruit which reoccur on the palate, together with a delightful freshness and harmony. The grapes are hand-picked and sorted in the vineyard, followed by fermentation with low sulphur dioxide content and ageing on fine lees until bottling.

HARVESTING AND VINIFICATION
Hand picking in 10/12 kg crates. The grapes are sorted in the vineyard, then on a vibrating table in the winery, followed by destemming, soft crushing by roller, very short cold maceration with dry ice and fermentation at a controlled temperature with low sulphur dioxide content. Ageing on fine lees for as long as possible, bottling and short bottle-ageing.
ANALYTICAL DATA: alcohol content: 12% vol.; total acidity: 5.3 g/l
TASTING NOTES: the wine has a very sleek straw yellow colour with coppery reflections and excellent balance between density and smoothness. To the nose, it transmits a great diversity of ripe yellow fruit overtones, from golden delicious apple to abate pear, yellow plum, nectarine and papaya. This is followed by flowery notes of wisteria and hawthorn. The first impact on the palate is full and intensely fruity, with great balance between smoothness and freshness; warm, caressing and full-bodied, with a lingering flavourful finish. An ideal wine to accompany seafood salad, spaghetti with shellfish and salted sea bass, but also Bassano style asparagus or spring herb omelette.
